Chile Rellenos Burgers

Summer is right around the corner! Which means it’s time to dust off the backyard barbecue and get ready for some delicious grilling recipes. We’ve already tested a few Memorial Day recipes on our grill and these Chile Rellenos Burgers are definitely a new favorite!

Grillers-CollageWB  If you’re familiar with Colorado cuisine, you know we eat a lot of green chilies. And one of my favorite ways to enjoy green chiles is in chile rellenos. I’m also a girl who loves a good burger. So I couldn’t resist combining both and creating a burger with all the flavors of a chile relleno.

If you’ve ever had a chile relleno, you’re familiar with the delicious combination of Anaheim peppers, melty cheese and a crunchy coating. You’ll find all of those flavors in these amazing burgers, but without all the work! And I love that you can cook your peppers right on the grill along with your burgers. Of course, a good burger needs a good condiment, so I whipped up some chipotle mayo too!


At my favorite Mexican restaurant, you get a choice between soft or crispy rellenos. I always choose crispy. I just love that deep-fried crunch! And I wanted to add the same crunch to my burgers, but without the deep-frying.

The answer: French fried onions!


Topped with the crunchy fried onions, melted pepper jack cheese, roasted peppers and chipotle mayo, these burgers were truly amazing! My husband and boys couldn’t stop talking about how good they were.

We used the Original Brat and Cheddar Cheese and Bacon Grillers for this recipe, but they come in Swiss Cheese and Mushroom flavor too! No matter which flavor you choose, they’re going to be delicious!

Chile Rellenos Burgers

    For the burgers

    • 1 (16 oz.) package JOHNSONVILLE® Grillers (any flavor)
    • 3-4 Anaheim chili peppers
    • Non-stick cooking spray
    • 6 slices pepper jack cheese
    • 1 cup French fried onions
    • 6 hamburger buns

    For the chipotle mayo

    • 2/3 cup mayonnaise
    • 1-2 teaspoons finely chopped chipotles in adobo (from a can)
    • 1/4 teaspoon garlic salt
    • 1/4 teaspoon pepper


    1. Preheat grill for medium heat. Slice the chili peppers in half vertically and remove the seeds. Spray the peppers with non-stick cooking spray.
    2. Grill peppers for about 4 minutes per side, or until they begin to blacken. Remove from grill and cool slightly. Chop chili peppers and set aside.
    3. Cook Johnsonville Grillers on the grill according to package directions. During the last few minutes of cooking, top each Griller with a slice of cheese.
    4. Place cooked burgers on buns. Top with chopped, roasted chilies, French fried onions and chipotle mayo.
    5. To make chipotle mayo: blend all ingredients in a small bowl until well combined.
