Chipotle Chicken Taco Cups for Game Day

We’re already making plans for the Big Game at our house. Whether our favorite team will be playing or not remains to be seen, but regardless, we’ll be having a party with some delicious game day eats, like these Chipotle Chicken Taco Cups.

This fun game day recipe features shredded chicken with a chipotle-cola glaze, served up in TOSTITOS® Scoops, then finished off with your favorite taco toppings. The glaze is a perfect blend of sweet and spicy, and it’s so easy to make! You just need a can of Pepsi™, some chipotle sauce, and a few pantry staples like cornstarch, brown sugar and spices.

Chipotle sauce is pretty spicy, so you won’t use the whole can, but you can store the rest in the freezer for another day. You should be able to find canned chipotle sauce near the enchilada sauce at your grocery store.

Once you’ve simmered all of the glaze ingredients on the stove top to thicken, you can add it to your shredded chicken. I went the easy route and used a supermarket rotisserie chicken, but you could certainly cook and shred your own chicken. While you can simply mix the sauce and chicken together, I found that my TOSTITOS® Scoops stayed more crispy if I drizzled the glaze over the chicken.

I baked my chipotle chicken cups for about 8 minutes to warm them up before adding my favorite taco toppings. You can serve these chicken cups with whatever toppings you like! Our favorites are sour cream, fresh tomatoes, shredded cheese, green onions and TOSTITOS® Thick and Chunky Salsa. Avocado and cilantro are also great additions.

I always like to have a variety of sweet and savory selections when I’m hosting a party. Since game day is a pretty casual affair at our house, I usually just pick up a few of our favorite candies and chocolates. SNICKERS® are one of my favorites, but my boys love colorful, chewy candies like Skittles®, so I do what I can to make everyone happy! If you’ll be entertaining, be sure to pick up the party sized bags.

Handheld, portable eats are always a good idea at a game day party, which is another reason these Chipotle Chicken Taco Cups are perfect for the occasion.  This recipe works well with shredded pork too, if you prefer that to chicken.

Chipotle Chicken Taco Cups

Ingredients

  • 1 (12 oz.) can Pepsi™
  • 3-4 tablespoons chipotle sauce
  • 2 tablespoons cornstarch
  • 3 tablespoons brown sugar
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon cumin
  • Salt and pepper, to taste
  • 3-4 cups cooked, shredded chicken
  • TOSTITOS® Scoops Party Size Bag

Optional taco toppingsSalsa

  • Shredded cheese
  • Sour cream
  • Diced tomato
  • Chopped green onion
  • Diced avocado
  • Chopped fresh cilantro

Instructions

  1. In a medium saucepan, whisk together Pepsi™, chipotle sauce, cornstarch, brown sugar and spices. Bring to a boil over medium heat, whisking often. Continue to simmer for 2-3 minutes until sauce has thickened. Season with salt and pepper, to taste. Set aside.
  2. Preheat oven to 350 degrees. Place TOSTITOS® Scoops on a large baking sheet and fill with cooked, shredded chicken. Spoon the chipotle-cola glaze over the chicken. Bake for 7-10 minutes, or until heated through.
  3. Remove from oven and top with your favorite optional taco toppings.

I picked up all of my game day supplies at Walmart. It’s so convenient to be able to get everything in one place–and most of what I needed was in the same aisle!
