Cucumber Mint Lemonade

This Cucumber Mint Lemonade is such a refreshing blend of some of my favorite summer flavors. It’s mostly lemon, with a hint of cucumber and fresh mint, and it’s the perfect drink for a hot summer day. To make this drink super simple, I use frozen lemonade concentrate, but if you’re feeling really industrious, you could certainly make your lemonade from scratch. Either way, this is a fun and delicious twist on a classic summer drink!

  • 1 (12 oz.) can frozen lemonade concentrate
  • 6 cups water, divided
  • 1 medium cucumber, peeled and cut into large chunks
  • 8-10 mint leaves


  1. In a large pitcher, mix lemonade concentrate and 5 cups of water.
  2. Add the cucumber and mint to a blender, along with the remaining cup of water and puree until smooth. Pour the mixture through a mesh strainer directly into the lemonade mixture and discard any solids.
  3. Stir the lemonade to mix thoroughly. Refrigerate until serving. Stir again just before serving. Pour over ice and garnish with additional fresh mint, if desired.
