Roasted Garlic & Lemon Green Beans

My neighbor Kristen recently had our family over to dinner and she served the most delicious Roasted Garlic and Lemon Green Beans. So when I picked up a bunch of fresh green beans at the farmer’s market, I wanted to prepare them the same way she did.

Honestly, I’ve never seen my kids eat green beans like that before. And my husband couldn’t stop raving about them either. This is one of those easy to prepare side dishes that will make a regular appearance on our dinner table. They’re easy enough to make for a week night meal, but fancy enough for a special occasion. I really like the toasted almonds, so I usually throw in some extra.  And if you like things really lemony, you can squeeze in a bit of juice along with the zest.  Enjoy!

Roasted Garlic & Lemon Green Beans

Ingredients

  • 1 tablespoon olive oil
  • 1 pound fresh green beans, trimmed
  • 1 small shallot, thinly sliced
  • 2 cloves garlic, minced
  • 1/4 cup sliced almonds, toasted
  • 1-2 teaspoons lemon zest
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400 degrees.
  2. In a 9×13 inch glass baking dish, stir together beans, olive oil, sliced shallots and garlic.
  3. Bake for 20-30 minutes or until beans are tender. Remove from oven and stir in toasted almonds and lemon zest.

  1. Those look so good. We do something similar but it would be nice to mix it up. The family does go nuts over stuff like this. I’m sure they will love this twist.

  2. I’m the worst now about giving people recipes because I hardly measure anything. But your guesses were pretty good. These are super easy and delicious, and I agree – the are easy enough for anytime but fancy enough to serve to someone. And they go well with lots of different meals. And to make it even more simple – I usually just rinse & trim fresh green beans, mix the shallots, garlic, and olive oil, toss to coat the beans then roast them uncovered – more like 20-30 minutes until tender-crisp. And if I have hazelnuts I use those instead of almonds. I am glad you guys liked them!
