My kids are super excited about the World Cup this year. Especially after the United States won its first game yesterday! And when my husband mentioned that soccer analysts Roger Bennett and Michael Davies (Men in Blazers) would be sharing World Cupcakes as part of their World Cup commentary, the idea for our own World Cup themed cupcakes was born.
These fun, colorful, soccer inspired cupcakes are so easy to make. Just whip up a batch of cake batter using your favorite boxed white cake mix. Remove 2/3 of the batter to a separate bowl and color it blue. Color the remaining cake batter green. Dollop the batter (alternating between blue and green, and using more blue) into paper cupcake liners until they are 2/3 full. Bake according to package directions.
When your cupcakes have cooled completely, pipe or spoon on a bit of marshmallow cloud frosting (recipe below) and decorate with soccer themed cupcake picks and/or country flags. I found some great free printable country flags over at Oh So Printable. These cupcakes are the perfect way to celebrate the World Cup–especially if you’ll be hosting a World Cup party. My boys can’t wait to share these with their friends!
Any white frosting will work, but this fluffy marshmallow buttercream frosting is my favorite!
- 2 cups butter, softened
- 2 1/2 cups confectioners' sugar
- 1 teaspoon vanilla
- 1 (13 oz.) jar marshmallow cream
- Cream butter with an electric mixer until light and fluffy.
- Beat in confectioners' sugar 1/2 cup at a time.
- Stir in vanilla.
- Add marshmallow cream and mix well.
