1 cup Zesty Italian dressing
2 cloves garlic, minced
1 pkt ranch dressing mix
1/2 cup water
1 1/2 teaspoons chili powder
1 1/2 teaspoons ground cumin
1/2 teaspoon red pepper flakes
Salt and pepper, to taste
Directions
Place all ingredients in a crock pot. Cook on high for 5-6 hours or on low for 8 hours.
Shred chicken with a fork. Season with salt and pepper, to taste. Serve in burritos, tacos, salads, etc.

This flavorful shredded chicken is perfect for almost any Mexican fare......burritos, tacos, taco salads, you name it! It's so easy to throw everything into the crock pot, and it freezes beautifully. I like to double or triple the recipe just so I can keep some on hand in the freezer for quick weeknight meals. I haven't ever had the chicken at Cafe Rio, so I can't vouch for how much it tastes like the real thing, but my whole family loves it!

ReplyDeleteEven better than shredding chicken with a fork...you can shred boneless skinless cooked chicken with your hand mixer while it is still warm. Save yourself about 15 minutes and aching hands. :) This recipe sounds yummy!
