1 quart strawberries, cleaned, hulled and sliced
Honey Poppy Seed Dressing:
1/4 cup orange juice
1/4 cup olive oil
1/4 cup honey
1/4 teaspoon Dijon mustard
1/4 teaspoon salt
1 teaspoon lemon juice
2 teaspoons poppy seeds
Directions
Toss spinach and strawberries in a large bowl. Whisk together dressing ingredients and serve alongside strawberry and spinach mixture.

When I first served this salad to my family, I didn't expect rave reviews. My husband is not a fan of mixing fruits with vegetables in a salad. And I was certain the kids would turn up their noses. But to my surprise, everyone loved it and now we have it with dinner 2-3 times a week. Strawberry spinach salad isn't a new thing--the honey poppy seed dressing is the real reason I've even bothered to share the recipe. One week and tried substituting store-bough poppy seed dressing. Nobody would touch it! And I got tired of sorting through the stack of printed recipes beside my computer every time I need the recipe for the homemade stuff. So I'm sharing it for my convenience, and yours! You can mix the dressing right in with the salad, but I prefer to serve it on the side. That way if you have leftovers, they don't go soggy. Toasted almonds are also a nice touch.
