1 cup chopped fresh broccoli
1 cup cherry tomatoes, halved
1 cup matchstick cut carrots
2 green onions, chopped
3 tablespoons olive oil
3 tablespoons lemon juice
Salt and pepper, to taste
Directions
Cook pasta according to package directions. Drain and rinse with cold water. In a large bowl, combine pasta and vegetables. Drizzle with olive oil and lemon juice; stir to coat well. Add salt and pepper to taste. Chill until serving.

I often fix myself this quick, healthy salad for lunch. It keeps well in the refrigerator for several days and is perfect for people who want to pack something healthy to the office. Of course, you can change up the vegetables to suit your tastes--bell peppers are one of my favorite substitutions. I try to use whatever veggies I have on hand.

ReplyDeleteI just wanna know why you have all those fancy dishes in a house with 3 boys.?.?. If the dishes that appear in your photos were at my house they would be cracked and broken in about point two milliseconds. How do you do it?
ReplyDeleteI got the dishes in this photo on clearance at Target for about $1 each AND they are plastic! As for the nicer dishes, I usually put food in them just for photos, then transfer it to the "real" dishes before I put it on the table. Believe me, we have a fine collection of plastic restaurant kid cups.

You have some great, easy, healthy recipes out here. What is also good is to add these veggies to your recipe for easy sesame noodles and serve chilled. Yum!
