1 tablespoon olive oil
1 pound fresh green beans, trimmed
1 small shallot, thinly sliced
2 cloves garlic, minced
1/4 cup sliced almonds, toasted
1 teaspoon lemon zest
Salt and pepper to taste
Directions
Preheat oven to 400 degrees. In a medium sized glass baking dish, stir together beans, olive oil, sliced shallots and garlic. Bake for 20-30 minutes or until beans are tender. Remove from oven and stir in toasted almonds and lemon zest.

My kids love these beans, so this recipe is a winner in my book. They are easy enough to make for a week night meal, but fancy enough for a special occassion.

My friend Kristen served these beans when she had our family for dinner one night. I knew I had to get the recipe when my kids gobbled them up. Kristin shared her cooking method with me and this is my best guess at a written recipe.

I'm the worst now about giving people recipes because I hardly measure anything. But your guesses were pretty good. These are super easy and delicious, and I agree - the are easy enough for anytime but fancy enough to serve to someone. And they go well with lots of different meals. And to make it even more simple - I usually just rinse & trim fresh green beans, mix the shallots, garlic, and olive oil, toss to coat the beans then roast them uncovered - more like 20-30 minutes until tender-crisp. And if I have hazelnuts I use those instead of almonds. I am glad you guys liked them!
